Massive Classic Italian Salad

Ingredients
  

For the dressing

  • 1/2 cup olive oil
  • 3 Tbsp white vinegar or rice vinegar or lemon juice for a zing
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/2 tsp sea salt

For the salad

  • 14 to 16 ounces romaine leaf lettuce chopped
  • 1 cup kalamata olives sliced
  • 1 cup pepperoncinis
  • 2 cups cherry tomatoes halved
  • 2 cups salami cut into strips
  • 1/2 cup red onion thinly sliced
  • 6 ounces grated Parmesan cheese about 1/2 to 1 cup, to taste

Instructions
 

Preparation

  • Mix the dressing: Add olive oil, vinegar, garlic powder, onion powder, dried parsley, dried oregano, black pepper, and salt into a small bowl. Stir well and set aside until you’re ready to dress the salad.
  • Chop your veggies: Dice up the romaine lettuce, halve the tomatoes, and slice the onions thinly.
  • Combine: Toss all salad ingredients into a very large bowl. Got a tiny bowl? Use two—this salad is massive!

Serving

  • Dress the salad: Drizzle your desired amount of dressing over everything and toss lightly. Store any extra dressing in a mason jar for up to two weeks!
  • Adjust for taste: Dig in! Add more Parmesan cheese and/or dressing according to your liking.
  • Serve and enjoy: Pair it with your main dish and dig in!

Notes

This salad keeps well in the fridge for up to 3-4 days. Store the salad and dressing separately to maintain that fresh crunch.
