  • 2 cups sharp cheddar cheese, grated
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 tsp mustard powder Adds a lovely kick to the flavor
  • Salt and pepper To taste

  • Cook the elbow macaroni in salted boiling water until al dente (about 8-10 minutes). Drain well and set aside.
  • In a saucepan, melt butter over medium heat. Whisk in the flour to create a roux; cook for 1 minute.
  • Gradually add the milk, whisking continuously until thickened (about 5 minutes).
  • Stir in the grated cheddar and mustard powder, seasoning with salt and pepper until melted and smooth.
  • Fold in the cooked pasta until it’s evenly coated in the cheese sauce.
  • Serve immediately or top with additional cheese or breadcrumbs for an extra crunch before serving.

Notes

For variations, consider mixing different cheeses, adding spices, using breadcrumbs for a crunchy topping, and even making a vegan version with nutritional yeast and cashew cream.
