  • 4 pieces boneless skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Divided into half for coating and topping
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced Toast for enhanced flavor
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil For pan frying

Preparation

  • Preheat your oven to 375°F (190°C).
  • In one dish, mix breadcrumbs, half the Parmesan, and Italian seasoning.
  • In a second dish, beat the eggs and milk until combined.
  • Place the flour in a third dish.
  • Dredge the chicken: First in the flour, then the egg mixture, and finally the breadcrumb mixture.

Cooking

  • In a skillet, cook the chicken in olive oil for 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish.
  • In a bowl, mix the remaining Parmesan with mozzarella and garlic. Top the chicken with this mixture.
  • Bake for 20-25 minutes until the chicken is cooked through and cheese is bubbly.

Notes

This dish can be stored in the refrigerator for 3-4 days. Reheat in the microwave or oven. For a lighter option, use chicken thighs instead of breasts.
