Ingredients
  

For the Chicken

  • 4 pieces boneless skinless chicken breasts
  • 1 cup bread crumbs Use seasoned for added flavor
  • 1 cup grated Parmesan cheese Divided for use in the breadcrumb mixture and topping
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • In one dish, mix together the bread crumbs, half of the Parmesan, and the Italian seasoning.
  • In another dish, beat the eggs and milk together until smooth.
  • Put the flour in a third dish for dredging.
  • Dredge each chicken breast in flour, dip it in the egg mixture, and then coat it with the breadcrumb mixture.

Cooking

  • Heat olive oil in a skillet and cook the chicken for 3-4 minutes per side until golden brown.
  • Transfer the chicken to a baking dish.
  • In a bowl, mix the remaining Parmesan with the mozzarella and minced garlic, then generously top the chicken with this mixture.
  • Bake for 20-25 minutes until cooked through.

Notes

Store leftovers in an air-tight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the oven for best results.
