  • 1/2 cup cooked bacon, crumbled

Preparation

  • In a large pot, sauté the chopped onions and minced garlic until they’re translucent and fragrant.
  • Add the diced potatoes and pour in the broth. Bring to a boil.
  • Reduce heat and simmer until the potatoes are tender — about 15-20 minutes.
  • Partially blend the soup for a mix of chunks and smoothness.
  • Return to heat and stir in the heavy cream, cheddar cheese, and sour cream.
  • Season with salt and pepper to taste.
  • Serve hot, topped with crumbled bacon and fresh chives.

Notes

For a vegan option, use coconut cream and skip the cheese and bacon. Tips: Don’t overcook the potatoes; they should be tender but not mushy.
