  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 tablespoons fresh lime juice Use fresh for best flavor.

  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In one bowl, mix your dry ingredients: flour, baking soda, and salt.
  • In a larger bowl, cream together the butter, granulated sugar, and powdered sugar until fluffy.
  • Add in the egg, lime juice, lime zest, and vanilla extract. Beat until well combined.
  • Gradually mix in the dry ingredients until just combined, ensuring not to overmix.
  • Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving about 2 inches between them.

Baking

  • Bake for 10–12 minutes until the edges are set and lightly golden.
  • Let them cool for a few minutes on the baking sheet before moving them to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze tightly wrapped for up to three months. Use fresh lime juice and zest for the best flavor. Consider adding a pinch of lime zest on top before baking.
