  • 1 cup quinoa Rinsed under cold water
  • 2 cups vegetable broth or water
  • 1 can (15 oz) chickpeas Drained and rinsed
  • 1 none lemon Zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste none salt and pepper
  • to taste none fresh parsley For garnish (optional)

Instructions
 

Preparation

  • Rinse quinoa under cold water.
  • In a medium pot, combine quinoa and vegetable broth or water.
  • Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is cooked.
  • In a large bowl, combine cooked quinoa, chickpeas, lemon zest, lemon juice, olive oil, thyme, and oregano. Mix well.
  • Season with salt and pepper to taste.
  • Serve warm or chilled, garnished with fresh parsley if desired.

Notes

Meal prep friendly! Lasts 4-5 days in the fridge and can be frozen for up to 3 months. Consider soaking quinoa for better texture or adding feta cheese for extra flavor.
