  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder Optional for chocolate flavor

Baking Instructions

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a large bowl, whisk together the yogurt, eggs, and vanilla extract until smooth.
  • In another bowl, combine the almond flour, coconut flour, erythritol, baking powder, baking soda, salt, and cocoa powder (if using).
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before slicing and serving.

Notes

For serving, cut into squares and pair with fresh berries. Dust with powdered erythritol for added sweetness. Store in an airtight container in the fridge for 3-4 days or freeze for up to a month. Use room temperature ingredients for best results. Consider adding lemon zest or a pumpkin twist for seasonal variations.
