  • 1 teaspoon baking powder
  • 1.5 cups all-purpose flour

Wet Ingredients

  • 0.5 cups unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups sour cream
  • 1 cup crushed pineapple (drained)

Glaze

  • 0.5 cups powdered sugar
  • 2 tablespoons pineapple juice

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with sour cream, starting and ending with dry ingredients.
  • Gently fold in the drained crushed pineapple until evenly distributed.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Glazing

  • In a small bowl, whisk together powdered sugar and pineapple juice until smooth.
  • Once the cake has cooled, drizzle the glaze over the top before slicing and serving.

Notes

For best results, let your butter soften and drain the pineapple well to avoid a soggy cake. You can also add toasted coconut on top for extra crunch.
