  • 3-5 pounds beef chuck roast Look for a good quality cut.
  • 2 large onions, sliced Sweet or yellow onions work best.
  • 1 can French onion soup (10.5 oz) Use your favorite brand.
  • 1 cup beef broth High-quality broth enhances flavor.
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced Toasting enhances the flavor.
  • Salt and pepper, to taste Generously season the roast.
  • Fresh thyme (optional) Adds additional flavor.

Preparation

  • Preheat your oven to 325°F (165°C).
  • Season the beef chuck roast generously with salt and pepper.
  • In a large oven-safe pot, heat some oil over medium heat. Sear the roast on all sides until browned, then remove from the pot.
  • Add the sliced onions to the pot and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Pour in the French onion soup, beef broth, and Worcestershire sauce. Stir well.
  • Return the roast to the pot and add fresh thyme if using.
  • Cover and place in the preheated oven. Cook for 3-4 hours or until the roast is tender and falls apart easily with a fork.

Serving

  • Serve warm, optionally with mashed potatoes or fresh bread.

Notes

This pot roast can be stored in the fridge for about 3-4 days in an airtight container. It can also be frozen for up to 3 months. Reheat in the oven or on the stove until warmed through. For variations, try herbed or spicy French onion soup for added flavor or substitute beef with mushrooms for a vegetarian option.
