  • 1 pound Italian sausage Use spicy or mild based on preference.
  • 2 pieces bell peppers (red and green), sliced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese Can replace with Gouda or cheddar for a twist.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the Italian sausage over medium heat until browned.
  • Add the sliced bell peppers, onion, and garlic to the skillet. Sauté until the vegetables are tender.
  • Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
  • Transfer the mixture to a casserole dish and top with shredded mozzarella cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

For a kick, use spicy Italian sausage. You can make this a day ahead for flavors to meld beautifully. This casserole can be stored in the fridge for 3-4 days or frozen for up to 3 months.
