  • 2 cups warm water Should be about 110°F (43°C)
  • 1 packet active dry yeast (2 1/4 teaspoons) Can substitute with instant yeast
  • 5 cups all-purpose flour More may be needed for kneading
  • 1 tablespoon salt
  • 1/4 cup olive oil Plus more for drizzling

Topping Ingredients

  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped Can substitute with other herbs
  • 1 teaspoon sea salt for topping

Instructions
 

Preparation

  • In a large bowl, combine warm water and yeast; let sit for 5 minutes until foamy.
  • Add flour, salt, and olive oil to the yeast mixture; stir until a dough forms.
  • Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.

Baking

  • Preheat your oven to 425°F (220°C).
  • Punch down the risen dough and transfer to a greased baking sheet; use your fingers to stretch and flatten the dough.
  • In a small bowl, mix together the garlic, rosemary, and a bit of olive oil; drizzle over the top of the dough.
  • Make dimples in the surface with your fingers, then sprinkle with sea salt.
  • Let rise for another 20 minutes.
  • Bake for 20-25 minutes until golden brown.
  • Let cool slightly before serving.

Notes

Serve warm with olive oil for dipping, or slather in butter and garlic. Focaccia can be topped with various ingredients like fresh tomatoes, herbs, or cheese.
