  • 3 large large eggs, separated Separate egg whites and yolks for a fluffy texture.
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract Or use 1 tsp vanilla plus 1 tsp almond extract.
  • 1 1/2 cups blanched almond flour
  • 2 tbsp cornstarch Or you can substitute with coconut flour.
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 cups peeled, diced apples Use fresh apples like Gala or Granny Smith for best flavor.
  • 1/4 cup sliced almonds
  • 1 tbsp turbinado sugar For sprinkling on top.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, beat the egg whites until fluffy and set aside.
  • In another bowl, mix the egg yolks, granulated sugar, and vanilla until frothy.
  • Add the almond flour, cornstarch (or coconut flour), baking powder, and salt to that mixture. Stir until combined.
  • Gently fold in the diced apples and egg whites until just incorporated.

Baking

  • Pour the batter into a greased cake pan and sprinkle with sliced almonds and turbinado sugar.
  • Bake for about 40-45 minutes, or until a toothpick comes out clean.

Notes

This cake can be served warm, dusted with powdered sugar or alongside a scoop of vanilla ice cream. Store leftovers in the fridge for up to a week or freeze for about three months.
