  • 4 pieces chicken thighs or breasts Bone-in chicken can be used for juicier meat.
  • 1 cup pineapple juice Freshly squeezed is recommended for best flavor.
  • 1/4 cup soy sauce Low-sodium soy sauce can be used for a healthier option.
  • 2 tablespoons brown sugar Light or dark brown sugar can be used.
  • 1 tablespoon ginger, grated Fresh ginger provides the best flavor.
  • 2 cloves garlic, minced Adjust to taste.
  • 1 tablespoon olive oil Can substitute with other vegetable oils.
  • to taste Salt and pepper Adjust seasoning according to preference.

Preparation

  • In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ginger, garlic, and olive oil.
  • Place the chicken in a resealable bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour or ideally overnight for more flavor.

Cooking

  • Preheat the grill to medium heat.
  • Remove chicken from the marinade and discard the marinade.
  • Season the chicken with salt and pepper.
  • Grill the chicken for about 6-7 minutes per side or until fully cooked and juices run clear.
  • Remove from the grill and let rest for a few minutes before serving.

Notes

Leftovers keep in the fridge for about 3-4 days. For longer storage, freeze for up to 3 months. Reheat in the oven or skillet until warm.
