  • 2 pounds carrots peeled and sliced into 2-inch pieces
  • 3 Tablespoons unsalted butter melted
  • 2 Tablespoons harissa paste
  • 2 Tablespoons honey
  • 1.5 teaspoons apple cider vinegar
  • 1 teaspoon kosher salt
  • Fresh parsley for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel the carrots and slice them into 2-inch pieces.
  • In a bowl, whisk together the melted butter, harissa paste, honey, apple cider vinegar, and kosher salt.
  • Toss the carrots in the bowl until they’re well-coated with the spice mixture.
  • Spread the carrots in a single layer on a baking sheet or in a large baking dish.
  • Bake for 25 minutes until the carrots start to brown and are fork-tender, tossing halfway through.
  • Serve with a sprinkle of fresh parsley on top.

Notes

Store leftovers in the fridge for up to 3 days in an airtight container. For longer storage, freeze for about 3 months. Reheat in the oven or microwave.
