Delicious homemade version of the popular Girl Scout Samoas cookies with a crunchy, chewy texture topped with caramel, toasted coconut, and melted chocolate.

Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Make sure it’s softened for easier mixing.
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt

Toppings

  • 1 cup toasted coconut Toast until golden brown for best flavor.
  • 1 cup caramel sauce Homemade or store-bought.
  • 1 cup dark chocolate, melted Use high-quality chocolate for better taste.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until fluffy.
  • Mix in the vanilla extract.
  • Gradually add the flour and salt, mixing until just combined.
  • Shape the dough into small discs and place them on a lined baking sheet.

Baking

  • Bake for 12-15 minutes until lightly golden.
  • Once cooled, top each cookie with a layer of caramel and sprinkle with toasted coconut.
  • Drizzle the melted dark chocolate over the cookies.
  • Allow the chocolate to set before serving.

Notes

For the best experience, serve with ice-cold milk. Store in an airtight container at room temperature for up to a week, or freeze wrapped individually for up to three months.
