  • 8 ounces elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese Use sharp for more flavor.
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Breadcrumbs (optional, for topping) Add for a crunchy topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the elbow macaroni according to package instructions, then drain and set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
  • Gradually whisk in milk, stirring constantly until the mixture thickens.
  • Remove from heat and add cheddar cheese and Parmesan, stirring until melted.
  • Combine the cooked macaroni with the cheese sauce, mixing well.
  • Transfer to a baking dish, and if desired, sprinkle breadcrumbs on top.
  • Bake for 20-25 minutes or until bubbly and golden on top.

Notes

Store leftovers in the fridge for 3-5 days or freeze for up to three months. Reheat in the oven or microwave for best results. For a gourmet touch, add truffle oil or sautéed mushrooms.
