  • 1 tbsp olive oil (extra virgin)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1 pound ground beef
  • 4 cups beef broth (low sodium)
  • 3 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 1 tbsp dijon mustard
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 tsp salt (adjust if needed)
  • 1/4 tsp ground black pepper
  • 2 tbsp all-purpose gluten-free flour (optional for thickening)
  • 12 oz gluten-free pasta

Instructions
 

Preparation

  • Heat a Dutch oven or large pan over medium heat with olive oil.
  • Add the diced onions and minced garlic. Sauté for about 3-5 minutes until fragrant and the onions are translucent.
  • Toss in the ground beef and cook until it's no longer pink.
  • Next, add everything else except for the flour and pasta. Stir it well and bring the mixture to a low simmer.
  • Sprinkle the flour into the pot and whisk to combine.
  • Add the pasta and bring it back to a simmer. Cook uncovered for about 10-12 minutes or until the pasta is tender, stirring occasionally.

Serving

  • Serve topped with shredded cheddar cheese if you like, or enjoy it as is. Sprinkle some red pepper flakes for an extra kick!

Notes

Experiment with different ground meats like turkey or chicken. You can also try some jalapeños or cayenne pepper for a spicy twist. This dish keeps well in the fridge for about 3-4 days and can be frozen for up to 3 months.
