  • 2 cups shredded chicken
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 1 cup ditalini pasta
  • 4 cups chicken broth

Seasoning

  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil For sautéing

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add diced onions, carrots, and celery; sauté until softened, about 5 minutes.

Cooking

  • Pour in chicken broth and bring to a boil.
  • Stir in ditalini pasta, shredded chicken, salt, pepper, and thyme.
  • Reduce heat and simmer for about 10-12 minutes, until pasta is cooked.
  • Serve warm and enjoy!

Notes

Tip: For a thicker soup, add a slurry of cornstarch mixed with water. You can swap ditalini pasta for rice or egg noodles. Adjust seasoning as needed throughout cooking.
