  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened Use room temperature for best results.
  • 1 cup milk Use whole or low-fat milk.
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 large eggs Room temperature preferred.

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, combine the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the flour mixture.
  • Pour batter into prepared pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve with powdered sugar, chocolate ganache, or ice cream. Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months.
