Ingredients
  

Marinade

  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 Tsp Cajun Seasoning Mix
  • 2 Tsp Olive Oil

Cooking Ingredients

  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 4-5 Pieces Garlic Cloves (chopped)
  • 0.5 Tsp Cajun Seasoning Mix
  • 15 g Grass Fed Butter
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan
  • Fresh Garnish Parsley

Instructions
 

Preparation

  • Mix chicken pieces with Cajun Seasoning Mix and olive oil. Seal in an airtight glass container to marinate.

Cooking

  • Heat a pan over medium-high heat and melt grass-fed butter. Cook the marinated chicken until crispy and golden. Let it rest before slicing.
  • In the same pan, add chopped red onion and garlic. Cook until fragrant, then toss in the remaining Cajun Seasoning Mix.
  • Lower the heat, add butter, then whisk in the milk. Stir in the light cream cheese and Parmesan for a smooth sauce.

Serving

  • Plate the Cajun rice, top with sliced chicken, and drizzle the creamy sauce. Garnish with fresh parsley.

Notes

Marinate chicken overnight for the best flavor. This dish can be made ahead and stored in the fridge for up to 3 days, or frozen for up to a month. For a vegan option, replace chicken with chickpeas and use coconut cream.
