  • 1 lb lean ground beef Can substitute with ground turkey or chicken

Vegetables and Aromatics

  • 1 medium onion, chopped
  • 2 cloves garlic, minced Sauté until fragrant

Sauce Ingredients

  • 1 can (15 oz) diced tomatoes (with juices) Adds flavor and moisture
  • 1 cup low-sodium beef broth For a rich base
  • 1/2 cup plain Greek yogurt For creaminess
  • 1/4 cup grated Parmesan cheese For added flavor
  • 1 tbsp Italian seasoning For flavor
  • Salt and pepper to taste

Cooking

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add the onion and garlic; sauté until fragrant.
  • Toss in the ground beef and cook until browned.
  • Stir in the diced tomatoes, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, and salt and pepper. Let it simmer for a few minutes.
  • Add the cooked pasta to the skillet with the beef mixture. Toss until well combined.
  • Serve the creamy beef pasta garnished with fresh basil or parsley.

Notes

This pasta keeps well in the fridge for 3-5 days. For meal prep, store in an airtight container. Freezing the pasta in portions will last up to three months. Reheat in a skillet with a splash of beef broth.
