High Protein Chicken Parmesan Casserole

Main Ingredients

  • 2 cups cooked and shredded chicken Use rotisserie chicken for convenience.
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 1 cup whole wheat breadcrumbs Toast for extra crispiness.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine shredded chicken, marinara sauce, ricotta cheese, dried basil, oregano, salt, and pepper. Mix until well combined.
  • Spread half of the chicken mixture in the bottom of a 9x13 inch casserole dish.
  • Sprinkle half of the mozzarella cheese and half of the Parmesan cheese over the chicken mixture.
  • Layer the remaining chicken mixture on top, and then add the rest of the mozzarella and Parmesan cheese.
  • Top with whole wheat breadcrumbs to create a crunchy topping.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until the cheese is bubbling and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes

Store leftovers covered in the fridge for up to 3-4 days, or freeze for up to 3 months. reheat in the oven or microwave.
