Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix together ricotta cheese, fresh herbs, mozzarella cheese, garlic powder, salt, and pepper.
  • Lay the chicken breasts flat and pound them to an even thickness.
  • Spread the ricotta mixture evenly over each chicken breast.
  • Roll up the chicken breasts tightly and secure with toothpicks if necessary.

Cooking

  • Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden.
  • Transfer the rolls to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
  • Serve with a side of your favorite vegetables.

Notes

These chicken rolls keep well in the fridge for up to 3-4 days. Store in an airtight container. They can be frozen for up to 3 months. For reheating, a quick toss in the oven will keep them deliciously moist.
