  • 1 pound Potato Gnocchi (fresh for better texture)
  • 2 tablespoons Butter Adds richness to the sauce
  • 1 tablespoon Olive Oil For frying
  • 3 cloves Garlic (minced)
  • 1 cup Heavy Cream Can substitute with half-and-half for lighter
  • 1/2 cup Parmesan Cheese (grated) Can use vegan Parmesan
  • 1 teaspoon Rosemary (chopped)
  • 1 teaspoon Parsley (chopped)
  • Salt and Pepper (to taste)
  • Red Pepper Flakes (optional for heat)

Preparation

  • In a large pot of salted boiling water, add the gnocchi. Once they float to the top, they’re done! Usually takes about 2-3 minutes. Drain and set aside.
  • In a large pan over medium heat, melt the butter and olive oil. Add the minced garlic and sauté until fragrant. Don’t let it burn.

Cooking

  • Pour in the heavy cream and let it simmer gently.
  • Stir in the Parmesan cheese until it’s a smooth and creamy consistency.
  • Toss in the cooked gnocchi, rosemary, parsley, salt, and pepper. Mix well to coat.
  • Dish it up immediately, and sprinkle with red pepper flakes if you’re feeling spicy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can freeze the gnocchi before adding the cream for future use.
