  • 1 tablespoon lemon zest Increase for more lemon flavor.
  • 1/4 cup powdered sugar For rolling the cookies.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the cake mix, vegetable oil, eggs, vanilla extract, and lemon zest until well combined.
  • Using a tablespoon, scoop dough and roll into balls, then roll them in powdered sugar.
  • Place the cookies on a baking sheet lined with parchment paper, ensuring they are spaced apart.

Baking

  • Bake for 8-10 minutes, or until the edges are lightly golden.
  • Allow them to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough for about 30 minutes before baking. Store cookies in an airtight container for 4-5 days or freeze for up to 3 months.
