Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cake mix, vegetable oil, eggs, vanilla extract, and lemon zest until well combined.
- Using a tablespoon, scoop dough and roll into balls, then roll them in powdered sugar.
- Place the cookies on a baking sheet lined with parchment paper, ensuring they are spaced apart.
Baking
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Allow them to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
