Hearty, Fluffy Gluten Free Oat Bread

Ingredients
  

Dry Ingredients

  • 1 3/8 cups all-purpose gluten-free flour blend I used Better Batter; click for full info on appropriate blends
  • 3/4 teaspoon xanthan gum Omit if your blend already contains it
  • 3/8 cup cornstarch
  • 5/8 cup certified gluten-free oat flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1/2 cup certified gluten-free old-fashioned rolled oats Save about 1 tablespoon for topping

Wet Ingredients

  • 1 cup buttermilk at room temperature
  • 6 tablespoons unsalted butter melted and cooled
  • 2 large eggs at room temperature, beaten

Instructions
 

Preparation

  • Preheat your oven to 375°F. Grease an 8.5-inch x 4.5-inch loaf pan (or a standard 9-inch by 5-inch loaf pan) and line it with parchment paper.
  • In a large bowl, mix together the flour blend, xanthan gum, cornstarch, oat flour, baking powder, baking soda, salt, and sugar until well combined.
  • Add almost all the rolled oats (save about 1 tablespoon for later) and mix evenly.
  • Create a well in the center of the dry mix and add the buttermilk, melted butter, and beaten eggs.
  • Stir to combine but be careful not to overmix; the batter will be thick but should flow off your spoon easily.
  • Pour the batter into the prepared loaf pan and smooth the top with a wet spatula.
  • For a pretty bread, make a 1/4-inch deep slash down the center with a knife.
  • Sprinkle the reserved oats on top and gently bang the pan on the counter to set the oats in.

Baking

  • Bake in the center of the oven for 10 minutes.
  • Reduce the temperature to 350°F and continue baking for an additional 45 to 50 minutes or until the loaf springs back when lightly pressed.
  • Remove from the oven and let it cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
  • Slice once cool and enjoy!

Notes

Serve this bread with creamy butter or homemade jam, and enjoy it for brunch, snacks, or lunchboxes. Cool completely before slicing for best texture.
