Dry Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1/4 cup honey or maple syrup Use maple syrup for vegan option
  • 1 cup milk (or favorite dairy-free alternative)
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract

Add-ins

  • 1 cup fresh or frozen blueberries Add frozen blueberries directly from the freezer

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  • In a large bowl, combine whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt.
  • In another bowl, mix together the honey (or maple syrup), milk, applesauce, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the blueberries.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

These muffins are delicious on their own or served with a dollop of Greek yogurt and a drizzle of honey. Store in an airtight container for 3-5 days at room temperature or a week in the fridge. For longer storage, freeze individually wrapped muffins.
