Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs Use gluten-free if needed.
  • 1/4 cup nutritional yeast
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • to taste Salt and pepper
  • 1 tablespoon olive oil (for baking) For brushing before baking.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  • Add breadcrumbs, nutritional yeast, onion, garlic, cumin, paprika, salt, and pepper to the mashed chickpeas; mix until well combined.
  • Form the mixture into small nugget shapes and place them on a baking sheet lined with parchment paper.
  • Brush the tops with olive oil.

Cooking

  • Bake for 20-25 minutes, flipping halfway through, until golden brown.
  • Serve warm with your favorite dipping sauce.

Notes

These nuggets can be stored in the fridge for 4-5 days or frozen for up to 3 months. Reheat in the oven for crispiness.
