Ingredients
  

Shortbread Base

  • 1 1/2 cups Almond Flour
  • 3 tbsp Butter (melted)
  • 1 1/2 tbsp Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Salt

Caramel Filling

  • 1 cup Creamy Peanut Butter
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 cup Almond Flour

Chocolate Coating

  • 1 cup Chocolate Chips
  • 1 1/2 tbsp Coconut Oil

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, mix the almond flour, melted butter, maple syrup, vanilla extract, and salt until it forms a dough. Press into the baking pan and bake for 10-12 minutes until golden brown. Let it cool.

Making the Caramel Filling

  • In a medium bowl, combine peanut butter, maple syrup, vanilla extract, and the remaining almond flour. Mix until smooth.
  • Spread the caramel over the cooled shortbread and freeze for at least 1 hour.

Chocolate Coating and Assembly

  • Melt chocolate chips and coconut oil until smooth.
  • Remove the pan from the freezer and cut into 16 bars.
  • Dip each bar in melted chocolate and place on a parchment-lined tray.
  • Drizzle with any leftover chocolate and sprinkle with sea salt. Freeze until the chocolate hardens.

Notes

Store any leftovers in an airtight container in the fridge for about 1 week or in the freezer for up to 3 months. For variations, you can try different types of chocolate or use nut-free alternatives.
