  • 2 large eggs Fresh
  • 1/2 cup pumpkin puree (150g)
  • 1/3 cup pure maple syrup Natural sweetener
  • 1/4 cup coconut sugar For added sweetness
  • 1/2 cup melted coconut oil Healthy fat
  • 1 tsp vanilla extract For flavor

Dry Ingredients

  • 2/3 cup oat flour Gluten-free option
  • 3/4 cup rolled oats Main base
  • 1 tbsp pumpkin pie spice For seasonal flavor
  • 1/2 tsp baking soda Leavening agent
  • 1/2 cup chocolate chips For sweetness and texture

Instructions
 

Preparation

  • Preheat the oven to 350ºF. Line or grease an 8×8 pan with parchment and set aside.
  • In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  • Add in the oat flour, rolled oats, pumpkin spice, and baking soda. Mix well and gently fold in the chocolate chips.

Baking

  • Pour the batter evenly into the lined pan and sprinkle extra chocolate chips on top.
  • Bake for 24-26 minutes or until a toothpick comes out clean.
  • Let cool for at least 10 minutes before cutting into bars. Enjoy!

Notes

For best results, ensure that all ingredients are combined well. Serve with Greek yogurt or drizzle of maple syrup for added flavor. These bars store well in an airtight container in the fridge for up to a week or can be frozen for up to three months.
