Ingredients
  

Wet Ingredients

  • 2 large eggs
  • ½ cup pumpkin puree (150g)
  • cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract

Dry Ingredients

  • cup oat flour
  • ¾ cup rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ tsp baking soda

Extras

  • ½ cup chocolate chips

Instructions
 

Preparation

  • Preheat the oven to 350ºF. Line or grease an 8×8 pan with parchment and set aside.
  • In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  • Add in the oat flour, rolled oats, pumpkin spice, and baking soda. Mix well and gently fold in the chocolate chips.
  • Pour the batter evenly into the lined pan and sprinkle extra chocolate chips on top.
  • Bake for 24-26 minutes or until a toothpick comes out clean.
  • Let cool for at least 10 minutes before cutting into bars. Enjoy!

Notes

For storage, these bars can be kept in an airtight container in the fridge for up to a week or frozen for up to three months. Reheat them in the microwave for a few seconds until warm. Use fresh pumpkin puree for enhanced flavor and consider adding nuts or seeds for crunch.
