  • 2 pieces eggs Can be substituted with flax eggs for a vegan option.
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 cup gluten-free oat flour You can also use other flours like whole wheat or almond flour.
  • 1 tsp baking soda
  • 1/2 tsp salt

Optional Ingredients

  • 1/2 cup mini chocolate chips Optional for added sweetness.

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Stir in the peanut butter, maple syrup, eggs, and vanilla extract until everything is well combined.
  • In another bowl, mix the gluten-free oat flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mix, stirring until just combined.
  • If you’re feeling fancy, fold in the mini chocolate chips.
  • Scoop the batter into the prepared muffin tins, filling each cup about 2/3 full.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Allow them to cool before indulging.

Notes

Store in an airtight container for about 5–7 days in the fridge, or freeze for up to 3 months. Reheat in the microwave when ready to enjoy.
