Ingredients

  • 2 cups rolled oats Regular rolled oats are recommended.
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Wet Ingredients

  • 1 1/2 cups apples, peeled and chopped Use sweet apples like Fuji or Honeycrisp for better flavor.
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup Adjust sweetness to preference.
  • 1/4 cup coconut oil, melted
  • 2 large eggs For vegan option, replace with flax eggs.
  • 1 tsp vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  • In another bowl, combine the chopped apples, applesauce, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined.
  • Fold in the chopped apples.
  • Pour the mixture into the prepared cake pan, spreading it evenly.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Allow to cool before slicing and serving.

Notes

Store leftovers tightly wrapped in plastic wrap for up to 5-7 days in the fridge, or freeze for up to 3 months. Reheat before serving.
