Ingredients
  

Dry Ingredients

  • 1 cup oats
  • 1/2 cup mixed dried fruits (raisins, cranberries, etc.)
  • 1/2 cup assorted nuts (almonds, walnuts, etc.)
  • 1/2 cup assorted seeds (pumpkin seeds, sunflower seeds, etc.)
  • 1/2 teaspoon vanilla extract
  • a pinch salt To taste

Wet Ingredients

  • 1/4 cup honey or maple syrup (optional) Use maple syrup for vegan option.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine oats, dried fruits, nuts, and seeds.
  • If using, add honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
  • Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.

Baking

  • Bake for 15-20 minutes or until the edges are golden.
  • Allow cookies to cool completely before transferring to an airtight container.

Notes

These cookies can last up to a week in the fridge or longer in the freezer. Reheat in the microwave for a few seconds for a fresh-baked taste.
