  • 2 tablespoons olive oil for marinating
  • 2 tablespoons lemon juice for marinating
  • 2 cloves garlic, minced for marinating

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 medium cucumber, grated
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Salad Components

  • 4 cups mixed greens or lettuce
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced

Instructions
 

Cooking the Chicken

  • Grill or bake the chicken breasts until fully cooked, then let them cool and slice.

Making the Tzatziki Sauce

  • In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper. Mix to combine.

Assembling the Salad

  • In a salad bowl, layer mixed greens, sliced chicken, cherry tomatoes, and red onion.
  • Drizzle the tzatziki sauce over the salad and toss gently to combine.
  • Garnish with fresh herbs before serving.

Notes
