Cookie Dough

  • 1 cup almond flour (or oat flour) Alternative flour options for texture.
  • 1/2 cup cashew butter Can be substituted with almond butter.
  • 1/4 cup maple syrup (or honey) Adjust sweetness to taste.
  • 2 tablespoons melted coconut oil Helps to bind the dough.
  • 1 teaspoon vanilla extract For added flavor.
  • 1 pinch salt Enhances flavor.
  • 1/4 cup mini chocolate chips (optional) For added cookie dough texture.

Chocolate Topping

  • 1 cup chocolate chips or chopped chocolate Use your favorite variety.
  • 1 teaspoon coconut oil (optional) Helps to melt chocolate smoothly.

Instructions
 

Preparation

  • Line a small baking dish (about 8x8 inch) or a small baking sheet with parchment paper.
  • In a medium bowl, combine the cashew butter, maple syrup, melted coconut oil, and vanilla extract. Stir until smooth.
  • Add the almond flour and salt to the wet ingredients. Mix until a thick dough forms. If using, fold in the mini chocolate chips.
  • Press the cookie dough evenly into the prepared dish, forming a flat layer.
  • In a microwave-safe bowl, melt the chocolate chips with the optional coconut oil in 30-second intervals, stirring until smooth.
  • Pour the melted chocolate over the cookie dough layer and spread evenly.
  • Place the dish in the refrigerator or freezer for at least 30 minutes or until the chocolate is fully set.
  • Once set, lift the bark out of the dish using the parchment paper and break or cut it into pieces.

Notes

Store in an airtight container in the refrigerator for about a week. Can be frozen for longer storage—let it warm up slightly before eating if frozen.
