  • 2 pieces chicken breasts Can substitute with turkey or tofu.
  • 2 pieces sweet potatoes, diced Roast until caramelized.
  • 1 cup rice (brown or white) Season with salt and a bay leaf for flavor.
  • 1 tablespoon olive oil For roasting sweet potatoes.
  • to taste Salt and pepper For seasoning.
  • optional spices (such as paprika, garlic powder, or cumin) Add according to preference.
  • to serve Fresh greens (like spinach or kale) Add on top before serving.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the diced sweet potatoes with olive oil, salt, pepper, and any desired spices. Spread them on a baking sheet and roast for 25-30 minutes, or until tender.
  • While the sweet potatoes are roasting, cook the rice according to package instructions.
  • Season the chicken breasts with salt, pepper, and any optional spices.

Cooking

  • In a skillet over medium heat, cook the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.

Assembly

  • Once everything is cooked, assemble the bowls by placing rice at the bottom, topped with roasted sweet potatoes, sliced chicken, and fresh greens.
  • Serve warm and enjoy!

Notes

Leftovers can be stored for up to 4 days in the fridge or up to 3 months in the freezer. Reheat gently before serving.
