Ingredients
  

For the apple filling

  • 6-7 medium apples Apples (Honeycrisp, Granny Smith, or a mix), peeled and sliced
  • 1 tbsp Lemon juice
  • 1/4 tsp Fine sea salt Divided
  • 1 1/2 tsp Vanilla extract
  • 1.5 tbsp Cornstarch or arrowroot
  • 1-2 tbsp Maple syrup For extra sweetness
  • 2 tsp Ground cinnamon Divided
  • 1/4 tsp Ground nutmeg

For the crisp topping

  • 1.5 cups Old-fashioned rolled oats
  • 3/4 cup Almond flour Or whole-wheat flour if preferred
  • 1/2 cup Chopped nuts Pecans or walnuts, optional
  • 5 tbsp Coconut oil or unsalted butter Melted
  • 1/3 cup Maple syrup
  • 1/4 tsp Fine sea salt Divided

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
  • Slice the apples into uniform 1/4-inch thick slices.
  • Toss apples in a large bowl with lemon juice, 1 tsp cinnamon, nutmeg, 1/4 tsp salt, vanilla, and cornstarch. Add maple syrup for extra sweetness if desired.
  • Spread the apple mixture in the baking dish.

Crisp Topping

  • In another bowl, mix together oats, almond flour, chopped nuts, remaining cinnamon, and salt.
  • Pour in melted coconut oil or butter and 1/3 cup maple syrup. Stir until the mixture is clumpy and evenly moistened.
  • Scatter the oat mixture over the apples, covering the surface without packing it down too hard.

Baking

  • Bake for 35-45 minutes until the topping is golden and the apples are bubbling. If browning too fast, tent with foil for the last 10 minutes.

Serving

  • Let cool for 10-15 minutes before serving. Enjoy warm, plain or with Greek yogurt or vanilla frozen yogurt.

Notes

Store leftovers in the refrigerator for up to 4 days. Reheat in the oven at 325°F for best texture.
