Preparation

  • Preheat your grill or grill pan to medium-high heat.
  • Peel and cube the sweet potatoes, then toss them in olive oil, paprika, garlic powder, salt, and pepper.

Cooking

  • Grill the sweet potatoes in a grill basket for about 15-20 minutes, turning occasionally until tender.
  • Season the chicken breasts with salt and pepper, then grill for about 6-7 minutes on each side or until fully cooked.
  • In the last few minutes of cooking, toss the broccoli florets on the grill until tender.

Assembly

  • Assemble the bowl by slicing the grilled chicken and adding it alongside the sweet potatoes and broccoli.
  • Top with sliced avocado and fresh herbs if desired.

Notes

This bowl stays fresh in the fridge for about 3-4 days. Store everything separately to maintain texture. Try different veggies like bell peppers or zucchini, or swap chicken for tofu for a vegan option!
