  • 1 lb ground beef
  • 1 packet taco seasoning or homemade blend
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat for 8-10 minutes. Drain the excess grease.
  • Add taco seasoning and 1/4 cup of water; simmer for 5 minutes.
  • Heat tortillas on a dry skillet or in the microwave until flexible.
  • Lay a tortilla flat and layer with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Finish with a sprinkle of shredded cheddar and mozzarella.

Grilling

  • Heat a clean skillet, sprinkle 2 tbsp of shredded cheese, place the burrito seam-side down, and grill until the cheese melts and forms a crispy crust, about 3-4 minutes per side.

Notes

Serve hot with crispy tortilla chips or zesty salsa. Store in the fridge for 3-4 days or freeze for up to a month. Reheat in a skillet for best results.
