  • 4 cups vegetable broth
  • 1 cup heavy cream Adjust based on preference
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Cooking Steps

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and garlic, and sauté until soft, about 5 minutes.
  • Stir in the green olives and cook for another 2 minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat and let simmer for 15 minutes.
  • Use an immersion blender to puree the soup until smooth.
  • Stir in the heavy cream and season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

This soup can be stored in the fridge for up to 4 days or frozen for up to three months. Always reheat gently on the stove.
