Cooking Instructions

  • In a large pot, sauté diced onion, garlic, carrots, and celery until softened.
  • Add the chicken breast and cook until browned.
  • Pour in the chicken broth and bring to a boil.
  • Stir in orzo (or zucchini noodles) and lemon juice.
  • Simmer until the chicken is cooked through and the pasta (or noodles) are tender.
  • Shred the chicken in the pot and mix in fresh dill, salt, and pepper to taste.

Notes

This soup keeps well in the fridge for about 3-4 days. For freezing, leave out the pasta to avoid mushiness when reheated. Consider pairing with crusty bread for soaking up the broth.
