Ingredients
  

For the Chicken Marinade

  • 2 pieces Chicken breasts Skinless and boneless
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon juice Freshly squeezed preferred
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste

For the Bowls

  • 1 cup Brown rice or quinoa Cooked according to package instructions
  • 1 cup Cucumber, diced
  • 1 cup Tomatoes, diced
  • 1/2 cup Red onion, diced
  • 1 piece Bell pepper, diced Any color
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Tzatziki sauce Store-bought or homemade

Instructions
 

Marinating the Chicken

  • Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.

Cooking

  • Grill or cook the chicken until fully cooked, then slice it into bite-sized pieces.
  • Cook brown rice or quinoa according to package instructions.

Preparing the Veggies

  • Prepare the veggies by dicing cucumber, tomatoes, red onion, and bell pepper.

Assembling the Bowls

  • Assemble the bowls: start with a base of rice or quinoa, then layer on the grilled chicken, fresh veggies, and crumbled feta cheese.
  • Drizzle with tzatziki sauce before serving.

Notes

Store leftovers in the fridge for up to 3 days. For meal prep, keep chicken and veggies separate from rice until ready to eat.
