Gluten Free Vanilla Donuts Recipe

Ingredients
  

Dry Ingredients

  • 1 1/2 cups all purpose gluten free flour blend (I used Better Batter; please click through for appropriate blends)
  • 3/4 teaspoon xanthan gum (omit if your blend already contains it)
  • 1/4 cup cornstarch
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon freshly grated nutmeg
  • 3/4 cup granulated sugar

Wet Ingredients

  • 8 tablespoons unsalted butter (melted and cooled)
  • 2 large eggs (at room temperature, beaten)
  • 3/4 cup plain yogurt (at room temperature)
  • 1 teaspoon vanilla bean paste (or 1 1/2 teaspoons pure vanilla extract)

Glaze Ingredients

  • 1 cup confectioners’ sugar
  • 2 to 4 teaspoons milk or buttermilk
  • 4 tablespoons unsalted butter (melted)
  • 1/2 cup granulated sugar

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease a standard-size donut pan and set it aside.
  • In a large bowl, whisk together the flour, xanthan gum, cornstarch, baking powder, baking soda, kosher salt, nutmeg, and sugar until combined.
  • Create a well in the center of the dry ingredients. Add the butter, eggs, yogurt, and vanilla, mixing until just combined.
  • Fill the donut pan wells until nearly full. For perfectly shaped donuts, use a piping bag with a large open tip to pipe the batter in smoothly.
  • Wet your pointer finger and run it along the center of each well to keep the donut holes from closing while baking.
  • Pop the tray in the middle of the preheated oven and bake for about 12 minutes or until the donuts are set and lightly browned.
  • Remove the pan and allow the donuts to cool for 5 minutes.

Optional Glaze

  • For an optional glaze or sugar-coating, mix 1 cup confectioners’ sugar with 2 to 4 teaspoons milk or buttermilk in a bowl until smooth.
  • Dip the tops of your cooled donuts in melted butter, then dredge in 1/2 cup granulated sugar for a sweet finish.

Notes

Ensure your eggs and yogurt are at room temperature for best results. Feel free to experiment with flavors.
