Ingredients
  

Main Ingredients

  • 1 lb potatoes, peeled and cut into chunks Use waxy potatoes for a creamier mash.
  • 3 tbsp softened or melted butter Can be substituted with olive oil or vegan margarine for a vegan option.
  • 6 tbsp gluten free all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt Adjust seasoning to taste.

Preparation

  • Boil your potatoes in a pot of salted water until tender, about 10-20 minutes.
  • Drain the water and let the potatoes steam dry in the pot for a few minutes.
  • Mash the cooked potatoes with a potato masher or ricer until smooth.
  • In a large bowl, combine the mashed potatoes with flour, baking powder, and salt. Mix until you have a thick, soft dough.

Cooking

  • On a lightly floured surface, shape the dough into an 8-inch round disc and cut into 8 equal wedges.
  • Heat a large non-stick pan or cast iron skillet over medium-high heat and brush with oil or butter.
  • Add the potato cakes to the pan and cook for about 4-5 minutes until golden brown, then flip and repeat on the other side.
  • Transfer the cooked potato cakes to a wire rack to cool. Repeat with the remaining dough.

Notes

Serve hot with buttery greens or a fresh salad. Can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months. Reheat in a toaster or on a pan.
