Ingredients
  

Dough

  • 1 recipe gluten free pizza dough Homemade or store-bought.

Garlic Butter Mixture

  • 4 cloves garlic (peeled and minced) Minced garlic adds rich flavor.
  • 1/2 teaspoon kosher salt
  • 4 tablespoons unsalted butter (melted) For brushing on the dough.

Cheese Toppings

  • 1 ounce finely grated Parmigiano-Reggiano cheese
  • 8 ounces part-skim mozzarella cheese (grated) Can substitute with other cheeses.

Instructions
 

Preparation

  • Make the pizza dough according to the recipe instructions.
  • Place the dough in a sealed container or bowl in a warm place to rise for 60 to 120 minutes.
  • Transfer the risen dough into the fridge for 30 minutes.
  • Optional: Let the dough rise overnight in the fridge for enhanced flavor.
  • Preheat your oven to 400°F with a pizza stone or an overturned baking sheet on the bottom rack.

Shaping and Baking

  • Lightly flour a surface, place the dough there, and shape it into an oval about 12 inches x 15 inches.
  • Make garlic butter by combining minced garlic and kosher salt to form a paste, then mix in melted butter.
  • Brush the garlic butter mixture over the dough edges.
  • Sprinkle the dough with Parmigiano-Reggiano and mozzarella cheese.
  • Transfer the dough on parchment paper to the hot pizza stone and bake for about 10 minutes until golden.

Serving

  • Let the breadsticks set, then slice into 16 sticks and serve warm.

Notes

Store in an airtight container for up to 3 days, or freeze for up to a month. Reheat to restore crispness. Add herbs to the butter for additional flavor.
