  • 1 cup unsalted butter, softened
  • 1.5 cups sugar
  • 4 large eggs Make sure they are at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk

Preparation and Mixing

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract.
  • In another bowl, whisk together the gluten-free flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until well combined.

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cooling and Serving

  • Let it cool before serving. Dust with powdered sugar, or serve with whipped cream or vanilla ice cream.

Notes

Store leftovers in the fridge for up to 3 days. For longer storage, slice and freeze pieces. Thaw at room temperature or warm in the microwave before serving.
