Ingredients
  

Dry Ingredients

  • 1 1/2 cups gum-free gluten-free flour blend
  • 1/4 teaspoon xanthan gum optional
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 tablespoons granulated sugar or up to 1/4 cup for sweeter pancakes

Wet Ingredients

  • 1 each egg at room temperature, beaten
  • 1 1/4 cups milk at room temperature
  • 1 teaspoon pure vanilla extract optional

For Cooking

  • Neutral cooking oil for greasing the pan

Preparation

  • In a mixing bowl, whisk together the gluten-free flour, xanthan gum, baking powder, baking soda, salt, and sugar until well combined.
  • In another bowl, mix the beaten egg, milk, and vanilla extract.
  • Gently combine the wet and dry ingredients until just blended.

Cooking

  • Heat a little oil in a pan over medium heat.
  • Pour the batter into the pan and cook until bubbles form on top, then flip and cook until golden brown.

Notes

Make sure your milk and egg are at room temperature for the best texture. Do not overmix the batter to keep it fluffy. Adjust the heat if your first pancake isn't perfect.
