Ingredients
  

Dough Ingredients

  • 2 cups gluten-free flour
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed Can substitute with coconut oil for vegan version.
  • 1 large egg Can use a vegan egg substitute.
  • 4-6 tablespoons cold water

Filling Options

  • Filling of choice (cooked ground meat, cheese, or vegetables) Use leftovers for convenience.

Instructions
 

Making the Dough

  • In a bowl, mix the gluten-free flour and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the egg and enough cold water to form a dough.
  • Roll out the dough and cut it into circles.

Filling and Baking

  • Add your filling to the center of each circle.
  • Fold over and seal the edges with a fork.
  • Bake at 375°F (190°C) for 20-25 minutes until golden brown.

Notes

Chill the dough for about 30 minutes for a flaky texture. These empanadas can be made ahead of time and stored in the fridge for up to 3 days or frozen for up to 2 months.
